Orange Blossom Honey Roasted Vegetables

Ingredients

  • 4 cups assorted vegetables (carrots, bell peppers, zucchini, cherry tomatoes, etc.), cut into bite-sized pieces

  • 1/4 cup orange blossom honey

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.

  2. In a small bowl, whisk together the orange blossom honey, olive oil, balsamic vinegar, and garlic.

  3. Arrange the vegetables on the prepared baking sheet in a single layer. Drizzle the honey mixture over the vegetables, tossing to coat them evenly. Season with salt and pepper.

  4. Roast the vegetables in the preheated oven for 20-25 minutes or until tender and slightly caramelized, stirring occasionally.

  5. Remove from the oven, garnish with chopped parsley, and serve immediately.
